With just a handful of ingredients, you can make a very healthy recipe. Today we bring to you these simple & delicious salmon & cucumber roll-ups. These are perfect for a snack and make great hors d’oeuvres for any get-together.
Cucumbers are super hydrating and are rich in structured water. Wild salmon contains healthy omega 3 fatty acids, great for supporting a healthy heart, skin, and immune system.
Cucumber & Smoked Salmon Roll-Ups
What you will need:
- 4 oz. Wild Alaskan smoked salmon.
- Non-dairy cream cheese (Miyokos or Treeline brand works well for this).
- 1 large organic English cucumber.
- A mandoline slicer or veggie peeler.
- Cracked pepper, to taste.
- Sesame seeds, optional for garnish.
Directions:
Prepare the zucchini using the veggie peeler or mandoline. You want the slices thick enough to be able to hold all the filling, but thin enough to be able to be rolled up completely.
Slice the cucumber lengthwise, into long slices. Once you reach the seeds, stop. The number of slices that you will get will vary. But you should get between 3-5 long slices. Lay them flat and set them aside.
Assemble each slice by first spreading an even amount of cream cheese, using a teaspoon.
Next, take small pieces of smoked salmon and lay them on top of the cream cheese. Starting at one end, begin rolling the cucumber slice until is completely rolled up.
Set aside. If the roll has trouble staying intact, you can use a toothpick to keep it all together.
Set them down on a plate and sprinkle with sesame seeds and cracked black pepper.
Serve immediately.
